We investigated the behavior of pectin which is binding the each fibers in Mitsumata, and resin and wax which is thought to be the main reason for the elegantness of Wagami, from the study of removal velocity of pectine, resin and wax and also from the velocity of reaction of binding of those substances with alkali. More than half of pectine is removed during the first 10 minutes in the cooking and then gradually removed and finally all the pectine is removed out. On the other hand the resin and wax are removed only in the first 20 minutes, and then almost none is removed and some of the resin and wax are remained in Mitsumata after cooking. The removal velocity of resin and wax is larger than that of pectine, and this is explained as the larger velocity of binding reaction with alkali and the part of existing in Mitsumata.
