Abstract
The present study examined the effects of Tremella fuciformis berkeley polysaccharide, a kind of water soluble polysaccharide extracted from the fruit body of Tremella fuciformis berkeley by hot water, on the bacteria growth of Lactobacillus delbrueckii subsp. bulgaricus B-5b and lactic acid fermentation. It was found that this polysaccharide could strikingly reduce the bacteria lag phase time, stimulate the bacteria growth and the lactic acid fermentation in 12% (w/w) skim milk culture media during a logarithmic growth phase at 37°C, and these effects had positive relationship with the polysaccharide concentration in the skim milk culture media.
