This study was intended to evaluate the productivity of Echium honey from some Echium plants and the quality evaluation (color, sugar content, sugar composition, sensory evaluation) which compares the domestic Acacia honey from Robinia pseudoacacia . The productivity of the Echium honey was estimated to be 61,000 kg・ha-1. The color of the Echium honey had the yellowness which was brighter than the Acacia honey and thought it was suited taste of the Japanese. Also, the sugar content (Brix) was higher than the Acacia honey and the sugar composition fitted with the essential composition of honey. In the sensory evaluation, the evaluations were equal to the Acacia honey approximately. These results show the possibility that some Echium plants become the honey sources plants which replace Robinia pseudoacacia for the beekeeping by honey bee (Apis mellifera).
