Sugar retards the setting of plaster of Paris containing Ca (OH) 2, but does not retard the setting of plaster of Paris without Ca (OH) 2.
The authors measured the amount of sugar adsorbed on the surface of plaster of Paris in a neutral or alkaline solution. The experimental results indicated that sugar was adsored on the surface of plaster of Paris both in neutral and alkaline solutions. And the adsorbent seemed not to be slightly soluble calcium saccharate, but molecules of sugar in neutral solution and water soluble complex in alkaline solution.
