Abstract
By one-concentration method in light scattering measurement, the molecular weights and raddii of gyration of commercial pectins and fruit pectins prepared in our laboratory were studied, the viscosities of dilute pectin solutions were also determined.
The weight average molecular weight Mw was 4.4_??_56.2×104, but the molecular weights of most samples were about 20×104. The radii of gyration RG was 180_??_580Å.
The intrinsic viscosity was 0.28_??_5.12.
The relation of the radius of gyration to the molecular weight was expressed by RGMwO.55 except some samples. The relation of the instrinsic viscosity to the molecular weight was expressed by [η]∝Mw0.64. Therefore from these indices pectins were found to have the molecular conformation of ordinary random c oil.
