Throughout human history, the rapid increase in human population has been supported by the progress of food technology. The important landmarks in the historical development of food technology are irrigation, the improvement of crops through breeding, and the development of fertilizers, agricultural chemicals, agricultural machines and transportation systems. However, a further scientific breakthrough is needed to solve global problems related to the production of food. In this article, a future vision for food technology is described, focusing on the scientific aspects of food security, the environmental effects of food production and improving the self-sufficiency index of Japan. In addition, environmental sustainability is discussed in relation to food technology.
