A CD Spectral Detection of a Conformational Change of Sol Components from Gelatin Gels at Their Extraction Stages

Abstract

The extracts obtained from the gels of an acid pigskin gelatin showed that the magnitudes of CD peak (221nm) went down to a low level near and above their individual extraction temperatures. The result is a clear indication of the break down of certain ordered structure before each “sol component” becomes extractable.
