Abstract

It is known that degradation of edible oils can cause food poisoning, and periodic replacement is required by sanitary codes. Although AV-CHECK papers are used for measurement, they are not efficient because of the temperature and time requirements for confirmation. Therefore, we developed a device to measure degradation based on RGB light attenuation even during cooking, and aimed to clarify the timing of oil replacement. In this study, we report on the development of the degradation diagnostic device and the validity of the device by measuring oil of different colors.
