In these cases, some centers adopted the ceiling ventilation system that no hood is required in each cooking machine. The application of this new ventilation system is expected to reduce the energy consumption of electrical kitchens. However, a systematic planning technique has not been established. Therefore, on the planning of the ventilation and air conditioning systems in centers installed electrical kitchens, it is necessary to grasp the present conditions of these centers. In this report, according to the brochures of the centers and the results of the questionnaire survey, the actual condition is investigated and analyzed. The contents of the condition are the scale and dimension of the centers, settings and capacities of cooking machines, types and air volume of ventilation, indoor design temperature and humidity of air conditioning system, total energy consumption, and so on.
