Abstract
Lactbacillus heterohiochii could not grow in fermented wort containing 10 mg/l isohumulone even after growing in fermented wort containing 5 mg/l isohumulone. L. heterohiochii could not induce the maltose-fermenting enzyme. However, Bacillus B1 could ferment maltose more vigorously than glucose. When Bacillus B1 was incubated in the modified medium III for Hiochi-bacteria used by Kitahara et al., but without mevalonic acid, in CO_2-atmosphere, it fermented maltose and glucose producing mevalonic acid-like substance with assimilation of CO_2. However, L. heterohiochii did not ferment. Therefore, it is concluded that Bacillus B1 is a new species other than L. heterohiochii, since the former has three specific characters described above. It was noticed that there was the enzyme system involving mevalonic acid-like substance by which fructose can not be fermented, and that there was the enzyme system involving mevalonic acid by which fructose can be fermented.
