Abstract
In Japanese, the natural materials, the dried bonito and seaweed were used for soup stock and the existence of the Japanese soup stock is very important on Japanese traditional dishes. The present study, we investigated that the effects of Japanese soup stock for physiological reaction and mood change.
When taking the extract from dried bonito, the widths of blood vessels of subjects were gradually enhanced. On the mood change, after taking the extract from dried bonito, the vigor of subjects increased. On the other hand after taking the extract from seaweed the tension and anger of subjects decreased. These results suggested that the consumption of soup stock influence the physiological reaction and mood change. The results of sensory evaluation suggested that the eating habits from the infant stage greatly influence on the taste of soup stock.
