抄録
The purpose of this paper is to clarify the structure of beef value chain by agricultural cooperatives. Agricultural cooperatives are engaged in beef consignment sales, deposit agreements, beef cow supply through breeding and fattening farms under direct management, and supply subsidization in order to increase beef cows. Through these projects, agricultural cooperatives are making efforts to support producers and maintain the regional production base. In addition, agricultural cooperatives are working with slaughtering and processing enterprises and wholesalers in their group to manufacture and sell products that match demand. In order to create added value, they are promoting cost reductions in production, slaughter and processing, better informed beef differentiation that meet the diverse needs of customers, and expansion of business areas to high value-added segments.
