Abstract
Melanoidin pigments prepared by heating an aqueous solution of glycine and xylose at 100°C for 2 hr were chromatographically fractionated into 8 color components (designated as P1, P2, P3, P4, P5, P6, P7 and P8, in order of elution with DEAE-cellulose). It is suggested that these color components of melanoidin were produced by oxidation in the following way; P1→P2→P3→P4→P5→P6→P7→P8.
Color components of melanoidin were separated by utilizing their change of elution position on DEAE-cellulose due to oxidation. The color tones of the separated color com ponents became darker and 1%1cm E450 values became higher in the order of elution on DEAF-cellulose. It is concluded that the amount of browning increased and the color tone darkened with increasing oxidation of the color components. According to spectral measurements, elemental analysis and amino acid analysis, all the color components appear to be very similar in chemical structure only differing as regards molecular weight, or degree of polymerization.
