Abstract
The adzuki bean (Maruba) contains about 25.69% protein (N×6.25), 24% of which was extracted by water and a 10% Sodium chloride solution. 15% of this was determined as albumin and globulin. By fractional dilution of 10 percent sodium chloride solution with water two globulins were isolated, both of which resembled the, β-globulin isolated from phaseolus angularis by Jones, Finks and Gersdorf. The two globulins designated as β1 and β1, differed markedly in their Nitrogen distribution as determined by the method of van Slyke. Further it was found that the β1-globulin is the principal protein in the Adzuki-bean.
