The paperelectrophoresis and dialysis studies on the mixture of protein (ovalbumin or serum albumin) and fatty acid gave. the following results.
At the tower concentration of fatty acid, ovalbumin could not form complex with fatty 'acid, but a part of the serum albumin com-bined with fatty acid.
At higher concentrations of fatty. acid, both two proteins were able to, form complexes with fatty acid.
Finally, the, .relation between the capability of complex formation and the prqteolytic digestibility of the two proteins were discussed.
