A non-destructive evaluation method for anthocyanin content in blueberry fruit was investigated by laser-induced fluorescence (LIF) spectra measurements. The LIF spectra had emission from flavonoid groups (F595), chlorophyll groups (F685) and others. The ratio of the fluorescence intensity F685/F595 under excitation at 532 nm was considered to be a good index for estimating the anthocyanin content of the blueberry fruits. The differences of anthocyanin content were suggested in different blueberries of ripeness degree or of variety by using this index.
