Immunological methods can be utilised in the characterisation of gums in a number of ways: the identification and quantification of gums from different species; the detection of adulterating gums in foods; and the functional and structural characterisation of the gum molecule. These approaches are applicable to any hydrocolloid, but here we present examples of each of these elements using gum arabic.
