Study for Identification of Mixed Taste Materials by the Taste Sensor with LB Film

Abstract

In this paper, sensor response by LB film material was described. LB film material was the Dioctadecyldimethylammonium bromide and the Au electrode was evaporated. To detect five typical taste substances,sensor parameters were defined by conventional maximum voltage change and new parameter as stability voltage change against response time. The taste sensor measured single solutions and mainly mixed solutions of five typical taste substances. Using these parameters mixed solutions of five typical substances were clearly discriminated.
