Abstract
This paper describes the enzymatic synthesis of various oligosaccharides by transglycosylation as follows: 1) Synthesis by transglucosylation of cyclomaltodextrin glucanotransferase, amylomaltase, α-glucosidase, α-glucosyltransferase, pullulanase, isoamylase, β-glucosidase, β-transglucosidase, and cellobiose phosphorylase. 2) Synthesis by transgalactosylation of α- and β-galactosidase and β-galactanase . 3) Synthesis by transfructosylation of levan sucrase, β-fructofuranosidase, and inulin f ructotransf erase and levan fructotransf erase.
