Abstract
Determination of acetaldehyde in a high-fructose corn syrup was investigated using highperformance liquid chromatography with fluorescence detector. Acetaldehyde complex in a high-fructose corn syrup was hydrolyzed in an aqueous phosphoric acid solution, and free acetaldehyde was obtained. The acetaldehyde was reacted with 1, 3-cyclohexanedione ; and fluorescent derivative, 1, 8-decahydroacridinedione was formed. The derivative was determined by high-performance liquid chromatography with a fluorescence detector. As a result, the amount of acetaldehyde in a high-fructose corn syrup was determined with 1000 times higher sensitivity than that of head-space gas liquid chromatography.
