Abstract

The location and the market scale of the family restaurant in the food service industry have changed along with the prolonged recession and declining birthrate and a growing proportion of elderly people.

The directionality of the family restaurant of the future is clarified by clarifying business conditions like the price cutting in the entire food service industry and the new entry.
