Abstract
Tastiness is a comprehensive evaluation on foods' various sensations such as taste, visual perception, etc. Among these sensations, visual perception plays a large role in food choice. Generally speaking “Sight gives birth to the first taste." However, few researches have addressed the effect of visual perception on foods' tastiness. This study aims at building a palatability model of box-lunches based on outward appearance impressions. We applied the SD method, conducted the questionnaire investigation by showing pictures of box-lunches to testers. Moreover, we conducted several covariance structure analysis based on answers to the questionnaire. Resulting, we could build a visual palatability of box-lunches, which represents how the testers feel testy from various outward appearance of box-lunches.
