Abstract

1) Simple tests for predicting the occurrance of dark browned sake-cake were performed.
2) The inhibitoy effect of some acids and sulfite was examined by applying this test.
3) The addition of sulfite (potassium bisulfite) to the moromi mash seems the most simple and successful to the purpose.
