Abstract

There was a kind of saké whose color was increased unusually by exposure to sunlight, the light from photoreflector lamp or UV ray.
When the saké of this type was exposed to the light at 344 mμ, the absorption of the saké at 425 mμ was increased markedly.
Unusual color development of the saké was prevented by potassium metabisulfite, sodium sulfite, sodium erythorbate, hydrogen peroxide and active carbon treatments.
Especially treatment with active carbon after addition of hydrogen peroxide was the most effective for preventing the color development of the saké.
