It was investigated what kind of factors took part in the color development of saké caused by sunlight.
There were ether soluble factors in the unusual saké which were named Y factors. Y factors and ether insoluble compounds in saké formed colored substances by exporsure to sunlight.
Y factors were fractionated by silica gel chromatography into four fractions. Properties of Y factors were studied.
