Abstract

In the course of studies on color development of sake caused by exposure to sunlight with the participation of deferri-ferrichrysin (reaction I), other color development reactions in which deferriferrichrysin did not participate were anticipated.
Sake fraction which was adsorbed on Amberlite IR-120 and eluted by N·NaOH was colored by: exposure to sunlight. From studies on this fraction, the scheme of the reaction was presumed as follows and this was named reaction II.
