The presence of two reaction systems in color development of sake caused by exposure to sunlight has been reported in previous papers. In this paper, these two reactions were proved to be the main reaction sytems in actual sake qualitatively and quantitatively, and it was demonstrated that as high as 75% of color development of sake caused by exposure to sunlight can be explained by these two, reactions. Furthermore, the method for estimating the extent of color development of individual sake caused by exposure to sunlight was proposed.
