Abstract

This paper deals with the result of a study on the causes of off-odor which appeared in a sorbatecontaining white wine. Two compounds, SOR-2 and SOR-3 were isolated, which turned out to cause similar off-odor to those observed in the sorbate-containing white wine. The chemical structure of SOR-2 was elucidated as (E)-butenedioic acid monomethyl ester by Mass, PMR and CMR spectroscopic studies. SOR-3 was suggested to possess the structure of (E)-4-oxo-2-butenoic acid.
