Abstract

Isolation and determination of protein bodies (PB-I, PB-II) in polished rice (polishing yield of 70%) were investigated by using sedium dodecylsulfate-polyacrylamide gel electrophoresis followed by densitomey of electrophoretic patterns. Contents of PB-I and PB-II among total protein in polished rice were determined to be 22.9% and 55.6%, respectively, on average of 101 samples (65 varieties), and the ratio PB-II/-B-I was 2.4. As the polishing yield decreased, the contents of PB-I and PB-II were decreased, though PB-II/PB-I remeined constnat. From results obtained, it seemed possible to characterize rice varieties by analyzing the composition of principal protein.
