Volatile substances of boiled prawns have been analyzed by means of gas chromatography, thin layer chromatography and infrared spectroscopy. The compounds listed below have been identified : acetic acid, iso-butyric acid, trimethylamine, ammonia, acetaldehyde, propionaldehyde, iso-butyraldehyde, n-butyraldehyde, and iso- valeraldehyde. Hydrogensulfide has been detected but no other sulfides and mercaptans.
