Abstract

With regard to food education, it is necessary to consider all aspects including production, distribution, consumption, waste and dietary culture. In this paper the authors examined the contents of industrials arts and home economics education in junior high school. As the results, the authors found the relationship between the cultivation area and the food area was not described. The authors therefore proposed the fundamental items for a total education, from-cultivation to consumption, using spinach, a typical green and yellow vegetable, as an example. Headings of the them are 1) the present state of dietary life and importance of vegetable intake, 2) the importance of green and yellow vegetable intake, 3) plant growth, constituents and preparation of spinach, 4) quality of food and plant growing conditions, 5) preservation and changes of constituents before use, 6) distribution routes and consumer labeling-information, and 7) Japanese dietary culture and improvement of dietary life of pupils.
