Abstract

In Aomori Prefecture, a demonstration project on the aquaculture of salmon trout has been promoted under an industry-academia-government-financial institution collaboration system. In this study, we conducted a market survey targeting general consumers, retailers, and restaurants in Singapore to clarify the issues affecting the market development of salmon trout from Aomori Prefecture. The market survey revealed that salmon trout from Aomori Prefecture could capture Singapore's market with their appealing color, high quality, low fat content, and the safety and security of their Japanese origins, even though Atlantic salmon currently occupies a larger market share in Singapore. Additionally, several issues were noted, such as price setting, quality of product delivered, cost of transportation and processing, and environmental protection, plus the low recognition of Aomori Prefecture. In order to promote the export of salmon trout produced in Aomori Prefecture, it is necessary to strengthen its market production system.
