Abstract

In another report, consideration was given to the wear characteristics on chilled cast iron rolls from a micro-structural viewpoint. In this report, the influence of worn rolls on ground stock in the 1B process on soft wheat was examined. The results show that the use of worn rolls influences on the shape of sheared wheat kernel and increases the percentage of flaked wheat kernels. Furthermore, the analysis results of fine particles having less than 125μm show that the percentages of starch damage and fine powder increase slightly. Also, the change in shape of the roll corrugations influences on the ash content. There is a correlation between the change in shape of the roll corrugations and the amount of high ash materials such as bran and aleurone layers which can be determined by the confocal laser scanning microscope using self-fluorescent image.
