Aspiration,that is miss-swallowing to airway,is serious to for the aged people,who have problem in a swallowing function and low resistance to pneumonia.One of the solutions for aspiration is to blend food into liquid food.For example thickener or grated yam is used to add thickness and cohesiveness.However the relationship among their rheology,flow characteristics and swallowing function is not clear.The caretakers must have to their own experimental rule to serve the meals.In this study,we measured the viscosity of yam and the solution of freeze-dried yam powder using a rotary rheometer.In addition,we measured pressure loss in steady flow through a circular pipe and obtained the extensional viscosity from the results of surface tensionmeter and capillary thinning.The relationship among those characteristics was discussed.
