This paper describes a developed food processing machine using superheated steam. The machine is intended to cook the baked food. We consider medium farmer producer and small and medium-sized food processors as main target users. The machine is designed with these following features: optimized size which is easy to carry, needless to use qualified incidental facilities such as boilers, suitable power consumption (3〜4kW) for users, and successive heating. We examined the thermal change of chestnut-paste by heat with superheated steam confirmed the practicability of the system.
