Abstract
Cell blocks are separated by grating yam, and the mucus solution and the starch particles flow from the broken cells. The shear viscous property of this dispersion system was simulated by the viscoelastic dispersion system, which was composed of a PEO dispersing fluid and the spherical particles of 30 μm and 250 μm diameter. These particles were used instead of starch and a block of cells. Although the shear viscous property was similar between these dispersions, the different extensional viscous properties were observed. The grated yam showed higher extensional viscosity than the PEO dispersing system because of the higher extensional viscosity of the mucus solution. In addition, the grated yam bolus of 5 cc showed the higher sliding velocity on a wet slope and the lower velocity on a dry slope, the sliding properties of which were contrary to the results of the PEO dispersions and suggested to cause smooth feeling at throat.
