Abstract
For entomophagy, it means eating insects, there are two possibilities as functional food and favorite grocery food. I have done cooking projects to spread entomophagy, but they did not succeed. Many people ate the insect food and said that "It is more delicious than I thought". But the experience was not sustainable but was temporary. So, I researched about food from the perspective of what is the good taste. As a result, I found that the texture in food is important. From the perspective of that, I explored why entomophagy projects failed and I have set a future policy.
