Development of ONSEN Gastronomy Walking through Industry-Government-Academia Collaboration

-A Case Study of Fujisawa City, Kanagawa Prefecture-

Abstract

This study explores gastronomic tourism as a means of regional revitalization in Fujisawa City, Kanagawa Prefecture. Through literature reviews, surveys, and design surveys conducted by university students, the study identified local attractions and proposed engaging tour experiences. The research highlighted the need to promote Fujisawa independently of well-known areas like Enoshima and Shonan. Based on student proposals, the "ONSEN Gastronomy Walking in Fujisawa" tour was developed and will be held in April 2025. This initiative aims to enhance local tourism, strengthen community engagement, and contribute to economic revitalization.
