Abstract
Loin ham and bacon were prepared from pigs which were fed with 10% safflower oil for 1 month. When albino rats were fed on diet with addition of 30 and 25% of these loin ham and bacon for 8 weeks, the growth was good and serum cholesterol was not increased and kept within normal limits. As the result of taste examination of these ham and bacon in comparison with the commercial ones, the taste was slightly lighter but was just as good, so that scarcely any differentiation is possible. This appears to be suitable as the food for the sick and healthy alike.
