Fungal exopolygalacturonase (exo-PG) free from endopolygalacturonase (endo-PG) was prepared from Sclase, a commercial pectinase preparation. The prepared enzyme hydrolyzed pectic acid incompletely, the limit value of degradation being the same as that of carrot exo-PG (CPG).
