β-Galactosidase was immobilized on particles and incorporated to tablets by pressing the enzyme with pulverized chitin or chitosan. The activity of the immobilized β-galactosidase to hydrolyze lactose was constant for several days, although the activity was lower than that of the intact enzyme in solution. Little enzyme exuded from the tablets. This immobilizing method was convenient and appeared to be potentially applicable to other enzymes.
