Abstract
The author established the method of compounding water-soluble EPA·DHA derivative, and evaluated the physiological function of the substances. This substance is α-amino acid-N-PUFA-sodium salt (AAS). AAS is the powder of the letter of a white crystal, and the solution is transparent and colorless. AAS induces EPA and DHA to acid-chloride, combined with the amino group of mono sodium glutamate or glutamic acid diethylester. AAS reduces the hemolysis of free fatty acid;EPA and DHA and deteriorate the survival rate of the cell which aquired tolerance to the antineoplastic drug.
Since AAS can make EPA and DHA water-solubility, using it for medical supplies, such as a nutrition agent and a curative medicine, and a food field widely is expected.
