GABA (γ-aminobutyric acid) is a functional constituent, which has a variety of functions such as blood pressure reduction, diabetes prevention, and sleep improvement. Absorption of water by rice grain activates various enzymes for the generation of GABA. The rapid water absorption into rough rice during the soaking process results in a high percentage of fissuring. In this report, in order to restrict the fissuring, GABA enriching characteristics were investigated using rice grains in its paddy form. As a result, we could achieve a high quality GABA enriched brown rice. GABA content after the enriching process can be estimated by the multiple regression analysis using the soaking and enriching conditions. The most significant condition is the enriching time.
