Abstract
The purpose of this study is to clarify the usage of commercial kitchen equipments and its energy consumption in the electrical kitchen. This paper describes the result of analysis on the energy consumption of the cooking equipments in the electrical kitchen of welfare facility for aged. As the results, the energy consumption by the varied equipments in the cooking purpose and its frequency was found. Moreover, especially for the breakfast menu ,the amount of work for the preparation was well considered to shorten the work time and to reduce the number of workers.
