The objective of this study is to evaluate the effects of additional light supply on the polyphenol contents, flavonol content and the antioxidative capacity of broccoli and red cabbage sprouts in the commercial scale. Broccoli and red cabbage were grown for four and five days respectively under the various length of light supplement (30-100 μmol/m2·sec) in the indoor sprout production system equipped with the newly developed additional light supplying device. Both polyphenol contents and kaemfperol content significantly increased in accordance with the length of light supplement. DPPH radical scavenging activity also significantly increased. Meanwhile, hypocotyl lengths were significantly shortened by more than two days light supplement. These results suggest that light supplements bring about the increases of polyphenol contents including flavonol, and as a consequence enhance the antioxidative capacity in the broccoli and red cabbage sprouts. These findings indicate that the additional light supplying device we developed is effective in enriching the polyphenol contents and antioxidative capacity of Brassica sprouts grown in an indoor production system on the commercial scale.
