Abstract
In order to study the decomposition mechanism of ascorbic acid more minutely, L-ascorbic acid was oxidized by hydrogen peroxide with ferrous ion (Fentone's oxidation) and products were determined. L-Threonic acid, glyceric acid, ketothreonic acid lactone, which was a reducton reducing the indophenol reagent, hydroxypyruvic acid, glycolic acid, oxalic acid, formic acid and carbon dioxide were detected. The decomposition mechanism of ascorbic acid was, therefore, supposed as indicated in Figure 9.
