Abstract
Determination of ascorbic acid (AsA) in the plant tissues containing anthocyan (Antc) was examined experimentally in the following points : 1) In 4 kinds of vegetables containing Antc, as compared with their green portions containing no Antc, total AsA values by 2,4-dinitrophenylhydrazine method agreed with the values estimated by the thin layer chromatography method (Fujita et al.^<6)>). 2) Japanese acid clay decolourized the colour of the sample solution with the partial oxidation of AsA to dehydroascorbic acid, but without influence to the total AsA value. The efficient adsorption of anthocyanins was observed by columns of cation-exchange resins such as Dowex 50 W × 4 and less by Dowex 50 W × 8 without oxidation of AsA.
