The purpose of this study was to examine the present eating behaviors of high school students
and the factors affecting them. We conducted a questionnaire survey for 751 high school students who
belonged to two public high schools in Saitama prefecture. More than 80% of students always or often
ate breakfast, lunch and dinner every day. About 85% students consumed foods with good nutritional
balance. Findings of multiple regression analysis indicated that the values of food, cooking skills, time
use, and the level of school significantly influenced eating behaviors, whereas knowledge about food was
not. These results suggest that it is effective to give guidance enhancing the values of food and focusing
on the time use in order to improve eating behaviors of high school students. Furthermore, it is necessary
to devise the ways to teach based on the school levels.
