Food of the same kind kept at 5°, 37° or 55°C, was injected into the stomach of the normal dogs and the functional movements of the minute structures in the peptic cells were observed. The peptic cells completed the first functional circle in 2 hours after a food administration and the second circle in 3 to 6 hours. Each circle was characteristic according to the temperature of the food.
In the case of 37°C food, the first circle ended early, and the second one came about late. As to the cases of 5° and 55°C food. the first circles passed with the same lapse of time, but at 5°C the discharge of secretion was as a rule less active than the production of it, and by 55°C the reverse was true. In the second circle, first the production of secretion was active, then the discharging of it. As for the study of the digestion in the stomach, not only the nature of food but also it's temperature must be taken into consideration.
