Evidence of the presence of trans-2-hexenol among tomato volatile components was shown using heavy solvent extraction and adsorption-desorption techniques.
The action of alcohol deshydrogenase isolated from tomato fruit on trans-2-hexenal shows that the pathway for the formation of trans-2-hexenol is enzymatic. The presence of hexanal and hexanol besides this alcohol indicate that the reduction of the double bonds by the enzymatic preparation is also possible.
